We are currently hiring experienced Sushi Chefs on behalf of SOKAI Sushi Bar, a well-established Japanese fusion restaurant with multiple locations throughout South Florida.
As a Sushi Chef, you will be responsible for preparing sushi and other Japanese specialties, maintaining the highest food safety standards, managing your workstation, and supporting a smooth kitchen operation.
Responsibilities
- Prepare sushi, sashimi, nigiri, maki rolls, hand rolls, and other Japanese-inspired dishes.
- Clean, cut, and fillet fish and seafood while ensuring freshness and quality.
- Prepare sushi rice, sauces, and other ingredients according to company recipes.
- Ensure every dish meets presentation, quality, and consistency standards.
- Set up, organize, and maintain the sushi station before, during, and after service.
- Monitor inventory levels and communicate product needs to management.
- Minimize food waste by following proper portion control and food handling procedures.
- Follow all food safety, sanitation, and health regulations.
- Maintain a clean, organized, and safe work environment.
- Work closely with the Executive Chef, Sous Chef, and kitchen team to ensure efficient service.
- Assist with special events, seasonal menu items, and promotional offerings when needed.
Qualifications
- Previous experience as a Sushi Chef is required.
- Strong knowledge of Japanese cuisine and sushi preparation techniques.
- Excellent knife skills and experience handling raw fish and seafood.
- Understanding of food safety and sanitation regulations.
- Ability to work efficiently in a fast-paced environment.
- Strong attention to detail and commitment to quality.
- Excellent teamwork and communication skills.
- Flexible schedule, including evenings, weekends, and holidays.
Preferred Qualifications
- Experience with Japanese fusion or Nikkei cuisine.
- Leadership experience in a sushi station is a plus.
- Food Handler Certification (preferred).
