Kumoya specializes in traditional sushi and innovative izakaya-style dishes with a modern Japanese twist. Our kappo-style dining concept allows guests to curate their own culinary adventure. Chef Corey Baker draws inspiration from Kaiseki cuisine, celebrating the seasons and micro-seasons inherent in sushi and Japanese cooking, resulting in a dynamic, ever-evolving menu.
Compensation range includes base, credit card tips, and service charge.

PURPOSE
The Sushi Chef is responsible for preparing traditional Japanese sushi rice, chopping, slicing, and filleting various kinds of fish and other ingredients, in accordance with restaurant standards and direction from the Executive Chef.
ESSENTIAL DUTIES & RESPONSIBILITIES
- Expertly prepare all types of sushi, including maki, nigiri, and sashimi, including various types of sushi dishes, according to established restaurant guidelines on quality, portion size, presentation, and food safety.
- Inspect the quality of fruits, vegetables, and fish used to prepare sushi dishes and inform the Executive Chef when quality is sub-standard.
- Maintain a clean work environment to prevent food contamination.
- Report any problems with kitchen equipment to Executive Chef.
- Sterilize all utensils, instruments, and equipment used in sushi preparation before every use.
- Communicate with wait staff to ensure that special requests and food allergy considerations are met.
- Perform other related duties as assigned.
REQUIRED KNOWLEDGE/SKILLS/ABILITIES
- Passion for great food and ability to consistently produce amazing food for our guests.
- Understanding of industry-standard best cooking and preparation practices.
- Good knowledge of various sushi types and sushi-rolling techniques.
- Familiarity with safe and sanitary food handling and preparation.
- Excellent organizational, time management, and multitasking skills.
- Great collaboration and teamwork skills.
- Ability to follow procedures and hold yourself accountable.
- Ability to work under pressure and deal with stressful situations during busy periods.
- Maintain a positive attitude and contribute to a positive team environment.
- Ability to take direction and feedback extremely well. Learn from mistakes and be able to react and respond quickly to issues.
- Ability to stand for long periods of time. Exceptional customer service skills.
QUALIFICATIONS/EDUCATION:
- High School diploma or GED.
- 1+ years’ experience working in upscale sushi restaurants.
- Must be able to work a flexible schedule including opening, closing, weekends, and holidays.

Pay: $27.00 - $34.00 per hour
