In this role, you will be Champion a culture of hospitality excellence by leading the dining team and utilizing deep wine expertise to create unforgettable culinary experiences. Direct all aspects of menu, cellar, and inventory management while maintaining the highest standards of service and presentation.
Mentor and develop team members through dynamic training programs, daily pre-service education, and active floor presence. Design bespoke private dining events, build and nurture high-value client relationships, and drive member engagement through personalized experiences. Collaborate closely with Purchasing and Accounting to streamline VPI integration, enhance operational efficiency, and support strategic business objectives.

Must have a valid driver’s license with no traffic violations in the last 3 years.

At least 5 years of food and beverage experience.

Certified Sommelier, Level II or higher.

Supervise the staff, on the floor, when needed. This may include any/all outlets and any/all scheduled services and/or events.

Lead and support service teams throughout all outlets, dining periods, and events, fostering a culture of hospitality excellence while delivering memorable experiences for members and guests.

While serving as the resident wine authority and sommelier, act as a hands-on leader who inspires the team, supports service operations, and steps in wherever needed to ensure flawless execution and exceptional guest satisfaction.

Conduct comprehensive clubhouse inspections and breeze walks daily prior to opening, and again at closing to ascertain any maintenance, repairs, or additional clean-up needs.

Responsible for the completion of all opening and closing duties for the day, and for all team members in areas of responsibility.

Collaborate closely with the Clubhouse Manager to develop and implement wine promotions, incentive programs, and ongoing staff education initiatives, including wine tastings, monthly wine education classes, and pre-shift features to enhance product knowledge and drive sales.

Provide refined wine service in accordance with Desert Mountain's Food & Beverage quality standards, including the proper presentation and decanting of mature vintages, while educating members and staff on wine appreciation, service etiquette, and tasting techniques.

Partner with the Chef de Cuisine to curate innovative food and wine pairings that enhance the member experience and uphold world-class hospitality standards year-round.

Develop a diverse and well-balanced wine program that offers selections across a range of price points to accommodate all members and guests.

Responsible for monthly reprints of wine lists.

Foster and sustain strategic partnerships with distributors and vendors to enhance product selection, service quality, and program excellence.

Maintain proper wine storage and inventory management and communicate any cellar equipment issues to Engineering for timely resolution.

Ensure all wine purchases align with budgetary guidelines and organizational standards

Support all efforts to promote food and beverage special events in coordination with the Concierge, Catering & Events Team, and other Clubhouses to increase member engagement.

Maintain and continuously update the member profile system to ensure accuracy and relevance.

Adhere to all state and local laws for serving alcohol responsibly.

Host and participate in wine tastings and attend designated external events as required.

Stay current on emerging trends in culinary arts, wine, and spirits.

Ensure adherence to all standard operating procedures and fine dining service standards.

Manage service flow effectively, prioritizing high-volume and high-traffic areas.

Comply fully with all Club rules and regulations.

Attend and actively participate in all staff meetings.

Align with the Wine Retail Director to maximize wine sales opportunities across all mountain venues.

Drive ongoing cost optimization through proactive vendor price negotiations.

During downtime, assist with table bussing and other operational duties as needed to support overall team efficiency.
