As Lead Chef you are expected to lead and work with a team to produce memorable dining experiences for our client and their guests. The position is strenuous at times and will be held at a multitude of difference terrains but the gratitude our clients have make it all worthwhile
DEDICATED RESPONSIBILITIES
-Oversee all culinary production of Seaside Foods LLC and affiliates
-Directs food preparation and collaborates team
-Assist with menu planning, inventory, management of supplies
-Ensures high quality products and oversees quality control
-Provide support to junior kitchen employees with various training including line cooking, food prep and plating
-Co-execute to repurpose prepared food items to minimize waste, freeze, donate
-Manage product ordering to keep a 33% or less food cost
-Ability to meet with clients and potential clients
-Assist with creating schedules for kitchen employees and evaluate their performance on a quarterly basis
-Manage kitchen team
-Lead kitchen team on and off site
-Assist with uniforms & kitchen team attire
RESPONSIBILITIES WHILE PREPPING
-Keep a well sanitized work station and equipment
-Prepare, wash, chop, grate, cut, slice, etc. various food items to appropriate portion sizes and standards
-Wear proper uniform for safety
-Follow weekly prep sheets and prep to completion dedicated items
-Prepare items will full integrity and uniformity
-Wrap/Label/Distribute prepared items to correct trailer, refrigerator, freezer, ice chest
-Clean, sanitize and maintain all equipment, vans, trailers, refrigeration
-Follow “End of Day Procedures” everyday

-Immediately report any unsafe conditions, equipment malfunctions, accidents or injury to owner
JOB REQUIREMENT/QUALIFICATIONS
-Degree in Culinary Arts preferred but not mandatory. Must have a minimum of 5 years culinary experience
-Leadership/supervisory experience required
-Knowledge of purchasing, ordering, receiving, food cost analysis required
-Extensive knowledge and ability to properly tow and back of trailers
CERTIFICATES/LICENSES
-ServSafe Manager Certificate
-Valid California Driver’s License
HOURS: Thursday-Monday 8am-5pm
** Due to the nature of our business, hours may vary. Peak season hours 8am – 6pm and possible Sunday
COMPENSATION TO START:
-$28-$31 DOE per hour / $42-$46.5 per hour overtime / $56-$62 per hour double overtime
-Normal weekly hours between 40-50hrs per week
-Overtime paid after 8-hour work day
-Gratuities are not guaranteed but are requested from clients.
PAID TIME OFF:
-5 days PTO first year & 2 additional day per year.
-Requiring pre-approval for days off
