The Cultured Pearl Restaurant & Sushi Bar, a cornerstone of Rehoboth Beach dining since 1993, is seeking an experienced Master Sushi Chef to expand our award-winning sushi team. This is a hands-on leadership role for a highly skilled sushi professional who values precision, organization, and calm execution in a high-volume restaurant environment. It requires a Chef who has had extensive experience as a Master Chef and who has a full understanding of the history and traditions of sushi. Having mastered the arts of rice cooking, fish selection, knife skills and the art of plating themselves, they will be required to train, inspire and cultivate this passion in our younger aspiring Chefs. Assuring a cooperative, friendly work environment during sushi preparation and while engaging with our customers and other Pearl Team members is imperative to maintain The Cultured Pearl’s high standard of service and excellence.
Responsibilities
· Prepare traditional and contemporary sushi with precision and consistency
· Expert-level fish breakdown, portioning, and quality control
· Lead sushi station during high-volume service
· Train and mentor sushi chefs and support staff
· Maintain strict food safety and sanitation standards
· Coordinate menu development and specials
· Control food cost, waste, and inventory
· Maintain a disciplined, professional kitchen culture
Qualifications
· 30+ years professional sushi experience
· Experience as a Master Sushi Chef, Head Sushi Chef and Sous Sushi Chef
· Advanced Japanese knife skills
· Strong knowledge of fish species and sourcing
· Ability to perform under pressure
· Leadership and team management experience
· Reliable and detail-oriented
