The Role
We are looking for an Executive Sous Chef to join our culinary leadership team at La Mar San Francisco.
This role is ideal for a strong culinary leader with solid experience in Peruvian cuisine, high-volume restaurant operations, and elevated culinary environments. The Executive Sous Chef will work closely with the Executive Chef to lead the kitchen team, maintain high standards of execution, support menu development, and ensure operational excellence.
We are looking for someone mature, hands-on, creative, and eager to grow with the company. This position offers a strong development path for a chef who can take ownership of the Executive Sous Chef role for the next 2–3 years and potentially grow into an Executive Chef position within the group.
What You’ll Do
Lead Kitchen Operations
Support the Executive Chef in overseeing daily kitchen operations, ensuring consistency, quality, speed, and organization across all areas of the kitchen.
Lead and motivate the culinary team during service, maintaining strong communication, discipline, and attention to detail in a high-volume environment.
Ensure that all dishes are executed according to La Mar’s standards, recipes, presentation guidelines, and flavor profile.
Preserve and Elevate Peruvian Cuisine
Bring strong knowledge and understanding of Peruvian cuisine, including its flavors, ingredients, techniques, and cultural essence.
Support the Executive Chef in maintaining the authenticity and standards of La Mar while contributing creative ideas that align with the brand.
Experience with seafood, Nikkei cuisine, omakase, Japanese techniques, or Asian-Latin fusion is highly valued.
Support Menu Development and Creativity
Act as a creative partner to the Executive Chef by contributing ideas for menu development, seasonal dishes, specials, and improvements to existing preparations.
Balance creativity with consistency, operational discipline, cost control, and respect for brand standards.
Develop and Lead the Team
Train, coach, and develop cooks and junior kitchen leaders, creating a strong team culture based on accountability, learning, and pride in execution.
Support onboarding, cross-training, and the development of culinary talent within the kitchen.
Promote teamwork, respect, urgency, and professionalism in a fast-paced environment.
Drive Operational Excellence
Support inventory control, food cost management, ordering, prep planning, waste reduction, and kitchen organization.
Ensure compliance with food safety, sanitation, and workplace safety standards.
Collaborate with the Executive Chef to identify opportunities for process improvement, efficiency, and consistency.
What We’re Looking For
- Strong experience as a Sous Chef, Senior Sous Chef, Executive Sous Chef, Chef de Cuisine, or similar culinary leadership role.
- Proven experience in Peruvian cuisine or a strong, demonstrable understanding of Peruvian flavors, ingredients, and culinary standards.
- Experience in high-volume, high-end, upscale, or fine dining restaurant environments.
- Strong seafood experience is a plus.
- Experience with Nikkei, Japanese, omakase, or Asian-Latin cuisine is highly valued.
- Strong leadership skills with the ability to train, coach, and develop kitchen teams.
- Hands-on leadership style and ability to remain calm, organized, and effective during busy service.
- Knowledge of food cost, inventory, ordering, prep systems, and kitchen controls is preferred.
- Creative mindset with the ability to contribute to menu development while respecting brand identity and operational standards.
- Professional maturity, strong communication skills, and long-term growth mindset.
- Must have current work authorization in the United States or a viable path to work authorization.
