A) JOB SUMMARY: Responsible and accountable for performing the egg processing quality assurance checks and tests on a daily basis at plant level.
B) PRINCIPAL RESPONSIBILTIES:
1) Ensure the incoming and outgoing eggs meet quality standards.
2) Principle responsibilities:
a) Randomly sample eggs offline to check for grade specifications are met.
b) Check and inspect cracks and dirty egg detector units for proper functioning.
c) Inspect and check scales on a weekly basis.
d) Follow HACCP Program and perform the required checks for the following:
- Check pH level and record it at every required interval specified in HACCP.
- Check wash and rinse temperatures and record them as specified in HACCP
- Observe and record Receiving and Shipping Cooler temperatures as required by HACCP.
e) Be familiar with Pa Certification requirements and specifications, as well as USDA requirements and grade standards.
f) Assist production personnel with daily issues, problems, mishaps.
g) Inspect all bought eggs for quality standards.
h) Be familiar with packaging operations, cartons and cases used, types of date coders and required dating information, trace-ability requirements and in-house coding systems for eggs. Perform code checks on products produced and packed.
i) Work with production personnel and supervisors on problem-solving.
3) Perform some other duties and tasks associated with quality assurance as required by Quality Assurance Manager.
C) REQUIRED SKILLS, ABILITIES, QUALIFICATIONS AND KNOWLEDGE:
1) Demonstrated knowledge of basic Quality Assurance checks and recording data. This may be acquired through training.
2) Demonstrated ability to work with other people, work with other department employees, inspectorial agency employees.
3) Thorough understanding of standards, measurements and metrics and applicable basic mathematics
D) PHYSICAL REQUIREMENTS:
- Must be able to stand on the hard floor for 8–10 hrs.
- Must have good eyesight or proper glasses to correct eyesight to recognize small defects on or inside eggs.
- Must be able to lift up to 50 lbs as some lifting is required for this job.
