SUMMARY:
The Line Cook prepares all food products, and follows established recipes accurately measuring all ingredients, and demonstrating quality food preparation and presentation techniques. The Cook adheres to established food production and sanitation standards and techniques. This includes, but is not limited to adhering to, time and temperature guidelines, and cleaning, sanitizing, and maintenance procedures.
RESPONSIBILITIES:
Food Preparation and Presentation:
- Prepares/garnishes food for service by following established recipes, employing quality food preparation and presentation. Keeps food items stocked and available, using first in-first out system and lets management know of stock levels for ordering purposes.
- Ensures accuracy and enforces established quality standards in p reparation of all items.
- Cross-trains in expeditor position and works assigned shifts.
Sanitation:
- Adheres to time/temperature principals, following proper cleaning, sanitizing and maintenance procedures for surfaces, walls, and storage areas.
- Covers, labels, dates, and stores all food products according to established standards.
- Properly rotates all food products.
- Follows all established cleanliness and sanitation rules.
- Cleans assigned storage units including refrigeration, shelving, and work surfaces.
Organization:
- Organizes and maintains all storage units, including shelving, dry and refrigerated storage.
- Exercises initiative; participates in decision making and problem solving.
- Maintains positive, team-oriented behavior; communicates effectively.
- Sets up and breaks down all areas of the kitchen.
QUALIFICATIONS:
- Ability to organize people and processes.
- Ability to work efficiently at a fast pace, and exercise well-developed time management skills.
- Ability to adapt to changing situations and needs in a calm and diplomatic manner.
- Ability to multi task, work independently when needed, and display a team oriented approach to work and staff.
- Ability to maintain punctuality and maintain excellent attendance.
- Strong customer service skills.
- Strong reading and writing capabilities.
- General knowledge of food safety and sanitation practices. Ability to complete hotel paid ServSafe course.
EDUCATION & EXPERIENCE
· Minimum of High School diploma or GED
· SERVE-SAFE or equivalent REQUIRED
· Minimum of 1 year of cooking experience in a hotel or FULL SERVICE restaurant. Fast food experience is not sufficient for this position.
WORK HOURS:
- This is an Essential Personnel Position that is expected to work during severe weather, closings and/or special events. Must have reliable transportation.
- Our breakfast is served 7 days/wk 6a-10a Dinner is served 5p-10p nightly. Shifts begin 60 minutes prior to service. There may also be some assistance required in prepping for banquets. Banquets are subject to scheduling and our sales efforts. Banquets are up to a maximum of 100 people. This position will require flexibility to work either shift!!! This position may be BOTH day and night shifts. Please DO NOT apply if you can not not work either shift without restriction.
