Description
In collaboration with the Pastry Chef, the Assistant Pastry Chef prepares and produces bakery and pastry products to include cakes, pastries, confections, ice cream, artistic statuaries and ornaments out of sugar, pastry or ices, and all bread and bakery products. This position supports all Food & Beverage functions for breakfast, lunch, dinner and banquet services and manages the Pastry Kitchen in the absence of the Pastry Chef.
A typical day for the Assistant Pastry Chef may include the following responsibilities:
- Supports the Pastry Chef with day-to-day operations pertaining to the preparation, sanitization, and execution of daily duties
- Keeps adequate supply of all prepared products on hand and ensures the proper storage and refrigeration of same
- Minimizes spoilage and waste by utilizing the proper quantities and rotating products
- Completes special pastry items and baked goods for certain events, banquets, promotions, or restaurant specials
- Operates kitchen equipment i.e. stoves, ovens, mixers, etc.

Requirements
The ideal candidate must possess professional working knowledge and skills of pastries and baked goods acquired in a hotel/resort setting or establishment with similar volume and products.
The ideal candidate is also someone with the following skills and abilities:
- Speak, read and write in the English language.
- Creativity, attention to detail and precision
- Strong working knowledge of standard baking principles, food products and equipment.
- Ability to decipher recipes and produce at varying quantities.
- Knowledge of weights and measurements.
- Previous experience producing custom orders of intricate cakes and pastries.
- Working knowledge of food safety guidelines for sanitation.
- Ability to multi-task and prepare multiple products at one time while ensuring quality.
- Ability to stand/walk for extended periods of time and engage in considerable physical activity on a consistent basis.
- Ability to work in varying environments including extreme heat.
- Available and willing to work a variety of shifts including days, evenings, weekends and holidays.
- Team player who can work with limited supervision.
- TB clearance required.
