Back of House Supervisor - Spenard Roadhouse
Summary/Objective
The Back of House Supervisor is responsible for the daily operations of the Restaurant kitchen. They lead the kitchen staff by maintaining high food quality standards, assisting in food production, and ensuring cost control standards are consistently met and maintained. The Kitchen Supervisor has a clear understanding of policies, procedures, and company vision. The Kitchen Supervisor is the person in charge in the absence of the Sous Chef.
Operations
- Regularly performs manager log and email review
- Drives training of new employees and ongoing training of all BOH staff
- Ensures proper and consistent execution of monthly Fresh Sheet and new menu items
- Maintains health code standards
- Communicate with the kitchen and prep crew
- Controls and ensures food quality
- Ensures completion of deep cleaning projects
- Ensures all kitchen areas are clean and properly maintained throughout the shift
- Conducts weekly facility inspection
- Performs waste tracking and review
- Oversees daily operations
- Provides ongoing staff coaching and encouragement daily
- Always present and on the line during busy periods
- Controls assigned budget
- Does line tasting and temperature inspections of equipment daily
- Tracks par levels of kitchen utensils and small wares
- Keeps track of linen usage and inventory with the help of the PM Sous Chef
- Other duties/responsibilities as assigned based on the needs of the business
Other Qualifications
- Must be at least 18 years of age
- Must be able to communicate, write, and understand English
- Must be able to work, standing and walking, in a fast-paced environment for up to 9 hours
- Must have a current Municipality of Anchorage Food Worker Card
Physical Requirements
- The employee is required to stand for extended periods of time and may occasionally be required to stoop, kneel, or crouch.
- Frequently lifts up to 40 pounds. The employee must be able to occasionally lift or move objects up to 50 pounds.
- Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception, and the ability to adjust focus.
