Are you passionate about developing old-style, hands on butchery and meat crafting skills with whole carcass beef, pork, chicken and lamb?
Kettle Range is looking for a talented and creative chef with a passion for high quality, locally sourced meat and small batch, from-scratch cooking.
You will join our team of skilled butchers and meat crafters to design recipes, plan menus, and oversee the daily production of the fresh, value-added beef, pork, chicken and lamb items in our retail meat cases.
Items under your creative control and execution will include:
- Marinades, Sauces and Rubs
- Kabobs, Skewers and Stir Frys
- Stuffed Breasts and Chops
- Stuffed or Rolled Roasts
- Pates, Confits and Rillets
- Special Programs (Such as Dry Aging, Whole Muscle Curing, etc.)
You will have full access to our fully-stocked commercial kitchen, professional meatcrafting equipment, and extensive local supply chain to execute your craft.
You will have daily opportunities to work side-by-side with experienced butchers who will teach you the art of whole animal butchery and assist you in the execution of your creations.
Qualifications:
- At least 3 years of professional cooking experience
- Knife skills
- Basic math skills
- Experience with developing recipes, including costing and budgeting
- Can stand for 8-10 hours
- Can lift up to 40 lbs.
- Open availability (week days and weekends)
- Team oriented
- Passionate about meat
