Summary:
Under the direction of the manager, the sanitation technician is responsible for all aspects of sanitation with the various pieces of equipment as well as other general housekeeping practices. This role is critical in maintaining a clean and food safe environment where product can be processed.
Duties and Responsibilities:
Preparation for sanitation

Donning designated PPE for employee protection during sanitation

Equipment disassembly for access to areas requiring sanitation

Chemical foaming applicator and sprayer preparations and settings

Arrangement of all items to be used for the sanitation tasks in advance to assure efficient and effective work is done
Deep cleaning sanitation of filling equipment, using designated chemicals at correct dilutions.

Involves the use of both automated metering devices, and manual mixing of chemical solutions.
- Involves the correct application of the chemicals to the correct locations following the designated dwell time on the equipment.

Proper rinsing/drying of equipment after sanitation

Performs swabbing of surfaces for verification of sanitation effectiveness, using methods that assure accurate, unadulterated samples are obtained
Post deep cleaning sanitation

Reassembly of machine components to prepare for filler product sanitation and production

Filler product sanitation utilizing 180ºF water directed from a hot water generator to the proper filler in a safe manner

Recharge of fillers after product sanitation with the correct sauce for production

Collection of product samples after filler product sanitation
General Sanitation

Cleaning of ceilings, walls, windows, floors, and drains using chemicals designated for each use

Cleaning of sinks using chemicals designated for them
Record Keeping

All activities performed by the sanitation worker must be accurately recorded on appropriate KFI documents.

Comply with all departmental & company-wide food safety policies & procedures.

Effective communication with co-workers to assure safe, efficient team work.

Reporting of any non-conformances to department supervision as they occur.

Responsible to report actual or potential food safety concerns to upper management.
Skills & Abilities:

Accurate record keeping procedures

Thorough understanding of sanitation protocols, and the goals to be obtained from proper sanitation

Thorough understanding of HACCP, HARPC, and GMP systems and rules per KFI’s programs
-
Thorough understanding of human safety requirements for tasks assigned to this position

Thorough understanding of environmental impacts of the tasks assigned to this position
-
Mechanical knowledge required to make basic machine part installations and removals
