Duties
- Prepare a variety of sushi, sashimi, and other Japanese dishes with precision and artistry, adhering strictly to recipes and presentation standards
- Operate kitchen equipment such as sushi rollers, knives, rice cookers, and refrigeration units safely and efficiently
- Maintain impeccable food safety and sanitizing procedures to ensure a hygienic workspace and safe dining experience for guests
- Assist in menu planning by suggesting new sushi combinations and seasonal specials to keep offerings fresh and exciting
- Manage high-volume production during peak hours while maintaining quality control and consistency
- Collaborate with team members to ensure timely service and smooth kitchen operations
- Uphold food handling standards, including proper storage, portioning, and waste management
Requirements
- Proven experience as a sushi chef or sushi maker in a fast-paced restaurant or fine dining setting
- Strong knife skills with the ability to create precise cuts for various fish and ingredients
- Extensive knowledge of food safety management, sanitizing procedures, and proper food handling techniques
- Experience with food preparation methods such as poaching, braising, grilling, and cooking various ingredients used in sushi dishes
- Familiarity with menu planning, recipe adherence, and high-volume production processes
- Ability to operate kitchen equipment efficiently while maintaining safety standards
- Previous experience in the food industry or culinary environment with a focus on Japanese cuisine preferred
- Excellent attention to detail, organizational skills, and the ability to work under pressure while delivering top-quality dishes
- Strong communication skills and a team-oriented attitude
