Bien Cuit is a James Beard-nominated, Brooklyn-based retail and wholesale bakery focusing on handcrafted bread and pastry. We are dedicated to the merging of classical and contemporary techniques that harness the benefits of fermentation, support the seasonality of local agriculture, and respect the centuries-old tradition of the bakery as the heart of the community. We are a quickly growing company and seek team members who are hands-on and have significant experience in the Food & Beverage industry.
Bien Cuit is looking for a baker comfortable working in high-volume production baking. The right candidate will be comfortable producing breads from mix to bake in accordance with our recipes, ensuring that all products coming out of the oven meet our quality standards. In addition to breads, bakers will be responsible for proofing and baking viennoiserie, quick breads, and any other products that are on our seasonally rotating menu.
Position Responsibilities:
- Check production schedule to determine variety and quantity of goods to bake
- Measure and mix ingredients to produce dough or batter according to recipes
- Roll, cut, and shape dough to form rolls, bread, and related products
- Cut, peel, and prepare fruit for bread fillings
- Place dough in pans, molds, or on sheets and bake in oven. Observe products while baking and adjust controls
- Mix fillings and other toppings and decorate breads, and other baked goods
- Use a variety of kitchen tools, including electric mixers, pans, rolling pins, and cutting tools
- Monitor baking process to identify needed adjustments
- Get information from production schedules and recipes
- Handle and move ingredients, tools, and cooking pans
- Control mixing processes and oven controls
- Implement products according to recipes
Education & Experience:
- Minimum 6 month to 1 year of experience in bread and related production
- Degree from a post-secondary culinary arts training program is preferred
- Experience with an oven is highly preferred
- Must have completely open availability to suit the 24-hour baking needs of Bien Cuit’s production schedule.
- Be passionate about the food industry with a strong interest in high quality products
- Strong organizational and decision-making skill, along with the ability to recognize what needs to be prioritized
Physical Requirements:
- Must be able to work shifts up to 10 hours while standing or walking to perform essential functions
- Will be required to lift up 50 lbs during the course of the workday
- Must be able to push or pull up to 150 lbs in duration of shift
- Will require bending, stooping, and occasional use of ladder
- Must be able to communicate effectively with management and team members

Pay: $17.00 - $19.00 per hour
