Responsibilities
- Prepare a variety of sushi including rolls, sashimi, nigiri, and specialty items with precision and artistry
- Follow established recipes and menu specifications to ensure consistency and quality
- Maintain strict adherence to food safety sanitizing procedures and food handling guidelines
- Assist in menu planning by suggesting innovative sushi creations and seasonal specials
- Manage food production efficiently during peak service times, ensuring timely delivery of dishes
- Use proper knife skills for slicing fish, vegetables, and other ingredients with accuracy and safety
- Support kitchen operations by assisting with other food preparation tasks such as poaching, braising, grilling, and cooking as needed
Experience
- Previous experience in a culinary setting specializing in sushi or Japanese cuisine is highly preferred
- Strong background in food industry standards including food safety management and sanitation practices
- Proven track record of high-volume production experience in a restaurant or catering environment
- Familiarity with dietary department procedures and dietary aide experience is a plus
- Demonstrated skills in menu planning, food presentation, and fine dining service
- Excellent knife skills coupled with knowledge of various cooking techniques such as grilling, braising, poaching, and food preparation
- Experience working in a fast-paced kitchen environment with high standards for quality and safety
