Located in the heart of Buckhead, GA, Ru San’s Japanese Restaurant has proudly served guests some of the finest Japanese cuisine and sushi for over 30 years. Known for our laid-back, high-energy atmosphere, we strive to provide a memorable dining experience—not just a meal.
As we continue to grow, we’ve introduced new menus featuring Tokyo-inspired food, expanded happy hour offerings, and authentic Japanese dishes. We are seeking experienced sushi chefs to help elevate these offerings.
Position Overview
As a Sushi Chef, you will showcase your skill, precision, and creativity in crafting both traditional and modern sushi. This role requires strong knife skills, a deep understanding of Japanese cuisine, and the ability to engage guests at the sushi bar while contributing to a fun, energetic dining experience.
Key Responsibilities
- Prepare and present sushi, sashimi, and specialty rolls with consistency and precision
- Execute proper fish butchery, cutting techniques, and sushi rice preparation
- Create and assist with traditional Japanese appetizers and small plates, inspired by authentic Japanese cuisine
- Support new menu items including traditional and fun Japanese cuisine and happy hour offerings
- Maintain strict food safety, sanitation, and storage standards
- Interact with guests at the sushi bar, delivering a welcoming and engaging experience
- Collaborate with kitchen and front-of-house teams to ensure smooth service during peak hours
- Assist with inventory management and food cost control
Qualifications
- Preferred 3 + years of experience as a Sushi Chef or Sushi Apprentice
- Exceptional knife skills and attention to detail
- Strong knowledge of raw fish handling, storage, and food safety standards
- Experience with traditional Japanese cuisine and appetizers
- Strong communication skills and a team-oriented mindset
Time Commitment
- Full-time or Part-time positions available (pay is based on availability and experience)
