Job Summary
Join the team behind Sonoma County's award-winning Texas barbecue. As a Pit Crew Team Member, you'll help produce everything that comes off our smokers, from trimming and seasoning briskets to managing live-fire cooks and preparing food for service. This is a hands-on role for someone who takes pride in hard work, enjoys learning traditional barbecue techniques, and thrives in a fast-paced kitchen. Responsibilities
- Trim, butcher, season, and prepare meats according to A&M BBQ standards.
- Operate and maintain offset smokers, managing live fires throughout the cooking process.
- Monitor cooking temperatures, cook times, and product quality to ensure consistency.
- Prepare daily production based on sales forecasts and catering needs.
- Prepare sauces, rubs, and other recipes according to standardized procedures.
- Maintain a clean, organized, and food-safe work environment at all times.
- Follow all food safety and sanitation procedures.
- Receive, rotate, and properly store inventory using FIFO practices.
- Assist with unloading deliveries and organizing walk-ins, freezers, and dry storage.
- Clean and maintain smokers, grills, knives, equipment, and prep areas.
- Work efficiently with the kitchen team to meet production deadlines.
- Communicate product levels and potential shortages to leadership.
- Help reduce waste by following proper yield, portioning, and storage procedures.
- Assist with catering and special event production as needed.
- Support other kitchen operations when business demands require.
- Perform opening and closing duties for the pit and prep areas.
- Uphold A&M BBQ's standards for quality, hospitality, teamwork, and professionalism.
Preferred Qualifications
- 1+ year of kitchen, prep, barbecue, butcher, or culinary experience preferred.
- Experience with wood-fired cooking or offset smokers is a plus but not required.
- Ability to lift 50+ lbs repeatedly throughout the day.
- Comfortable working in hot, physically demanding environments.
- Strong attention to detail and commitment to consistency.
- Reliable, punctual, and able to work weekends and holidays.
- Positive attitude and willingness to learn.
- Excellent customer service skills with a friendly, energetic attitude.
- Has California Food Handler's Card and knowledge of food safety standards and sanitation practices.
- Experience in food industry roles such as serving, cashiering, or kitchen work is advantageous.
- Ability to stand for extended periods and perform physical tasks related to food preparation and cleaning.

Pay: $18.00 - $21.00 per hour
