Job Summary
Froso’s Family Dining is seeking a passionate, high-energy Sous Chef to serve as the second-in-command in our kitchen. You will work closely with the Head/Executive Chef to oversee daily culinary operations, manage kitchen staff, and maintain exceptional food quality. The ideal candidate is a strong leader who can maintain composure during peak hours, mentor line cooks, and ensure the kitchen runs like a well-oiled machine.
Core Responsibilities
- Kitchen Leadership: Supervise, train, and mentor the kitchen team, ensuring line cooks follow recipes and presentation standards.
- Service Management: Direct the line during service, expedite dishes, and step in to cook at any station when necessary.
- Operational Oversight: Manage inventory, place ingredient orders, control food and labor costs, and minimize waste.
- Menu Collaboration: Assist the Head Chef with menu development, daily specials, and recipe testing.
- Safety & Compliance: Enforce strict health, sanitation, and safety standards; lead the kitchen successfully through health inspections.
- Administrative Duties: Help manage kitchen scheduling, staff performance reviews, and daily food prep lists.
Qualifications & Skills
- Experience: 2+ years of experience as a Sous Chef, Junior Sous Chef, or Lead Line Cook in a high-volume, scratch kitchen.
- Technical Skill: Advanced culinary skills, masterful knife handling, and deep knowledge of food safety regulations.
- Leadership: Proven ability to manage, motivate, and direct a diverse kitchen team under pressure.
- Business Acumen: Basic understanding of kitchen financials, including food cost percentages and labor management.
- Certification: Active ServSafe Manager certification required.
- Stamina: Ability to stand for long shifts, work in hot environments, and lift up to 50 lbs.
- Schedule: Must have open availability, including nights, weekends, and holidays.
