Responsibilities
- Prepare a variety of sushi, sashimi, and other Japanese dishes with precision and artistry, adhering to established recipes and presentation standards
- Maintain high standards of food safety, sanitizing procedures, and hygiene throughout all stages of food handling and preparation
- Manage inventory control and food production processes to ensure freshness, quality, and cost efficiency
- Supervise kitchen staff, including training team members on sushi techniques, food safety protocols, and efficient workflow practices
- Oversee shift management, ensuring smooth operations during busy service hours while maintaining excellent customer service
- Collaborate with the culinary team on menu planning, ingredient sourcing, and catering for special events or banquets
- Enforce strict adherence to dietary restrictions and allergen management to accommodate diverse guest needs
Skills
- Extensive experience in sushi preparation, fine dining environments, and restaurant management
- Proven supervisory experience with team management skills that motivate and develop staff
- Strong background in food safety sanitizing procedures, inventory management, and cost control measures
- Skilled in food production, catering experience, and kitchen operations within the food industry
