We source our own animals, break down whole carcasses in-house, and focus on quality over volume. Everything is fresh, never frozen, and handled with precision from start to finish.
This is real butchery — not grocery store production work.
Position Overview
We are hiring a skilled, experienced Meat Cutter / Butcher who can perform at a high level without constant supervision.
You should be confident breaking down primals, cutting steaks to spec, and maintaining consistency in a fast-paced environment.
Responsibilities
- Break down beef primals and sub-primals efficiently and accurately
- Cut steaks and portions to exact specifications (ribeye, NY strip, filet, tri-tip, etc.)
- Produce clean, consistent cuts with minimal waste
- Handle high-volume cutting while maintaining quality standards
- Set and maintain a premium display case
- Assist with ground production, marinated items, and value-added products
- Maintain a clean, organized, and food-safe workspace
- Communicate and work efficiently with the team
Requirements (Non-Negotiable)
- Proven experience as a meat cutter or butcher
- Strong knife skills and ability to work with large cuts of meat
- Experience breaking down primals (whole animal experience is a plus)
- Ability to maintain speed without sacrificing quality
- Ability to lift 50+ lbs and stand for long periods
- Weekend availability (Friday–Sunday required)
- Reliable, punctual, and professional

Schedule
- Full-time
- Shop hours: 10 AM – 6 PM
- Must be available weekends
