PURPOSE
The Sous Chef at Harry’s at Hofheimer serves as the operational leader of the kitchen, ensuring that daily execution consistently reflects the restaurant’s commitment to exceptional food, efficiency, and teamwork. Working in close partnership with the Chef, this role translates culinary vision into disciplined preparation, flawless service execution, and consistent standards across both restaurant and in-house event operations. Through hands-on leadership, team development, and accountability for quality control, the Sous Chef reinforces Harry’s reputation for delivering flavorful American cuisine and seamless guest experiences.
- Ensure the kitchen is fully prepped and organized at all times to meet service demands at the highest standard.
- Create detailed daily and weekly prep lists aligned with projected business levels.
- Delegate prep tasks effectively to kitchen staff, ensuring clarity of expectations and accountability.
- Oversee execution of prep to guarantee quality, consistency, and efficiency.
- Provide hands-on training to new and existing kitchen staff.
- Ensure all team members are cross-trained across stations to promote flexibility and operational efficiency.
- Train and reinforce proper station setup, breakdown, and closing procedures.
- Monitor performance during service, offering real-time coaching and guidance.
- Uphold all culinary standards set by the Chef and ownership.
- Oversee plating, taste, and execution to ensure consistency and excellence.
- Take full responsibility for dishes leaving the kitchen, ensuring no substandard plate reaches a guest.
- Address performance or execution issues immediately to maintain high standards.
- Maintain consistent and clear communication with FOH regarding 86’d items, menu updates, and featured items to promote.
- Collaborate with service staff to ensure smooth kitchen-to-floor transitions during service.
- Ensure support staff are maintaining cleanliness and efficiency, including managing glass racks, trays, and removal of event plates.
- Assist in coordinating pacing between kitchen production and service flow.
- Maintain strict organization and cleanliness throughout all kitchen areas.
- Ensure all walk-in cooler shelves are clearly labeled and properly organized.
- Oversee organization and cleanliness of dry storage, spice racks, and prep stations (including under-table storage).
- Verify that all food and prep items are labeled, dated, and stored correctly.
- Ensure strict adherence to FIFO (First-In, First-Out) inventory practices.
- Monitor expiration dates and discard outdated items promptly to maintain food safety standards.
ABOUT THE HOFHEIMER BUILDING AND HARRYS
We offer a fun, fast-paced, creative work environment. Located in Scott's Addition - the Historic Hofheimer Building is a restaurant, event venue, rooftop bar and live music venue. Harrys, the restaurant on the first floor of the building, opened in September of 2023. Harrys kitchen provides food to all 3 floors as well as providing food for all of the catered events that we host.
