The Role
We’re looking for a Pitmaster — or someone ready to become one — to join our team and learn the full art of smoking meats on offset stick burners. This is a hands-on apprenticeship-style role: you’ll work directly with our team to master fire management, meat selection and trim, seasoning, smoke timing, and the judgment that separates good barbecue from great barbecue.
No prior pitmaster experience is required if you bring the right work ethic and genuine interest in the craft. Experienced pitmasters are also encouraged to apply — we’re happy to bring you in at a level that matches your skill.
What You’ll Learn & Do
- Running and tending offset stick burners — fire management, temperature control, and airflow
- Selecting, trimming, and seasoning briskets, pork, and other proteins
- Reading smoke, bark, and doneness by feel, not just a thermometer
- Managing overnight and early-morning cook schedules for large-format cooks
- Food safety and sanitation practices for both commissary and live-event environments
- Supporting high-volume event service at venues like the LA Convention Center
- Eventually training others as you grow into the role
What We’re Looking For
- Reliable, punctual, and able to work early mornings, late nights, and weekends around event and cook schedules
- Physically able to lift/move heavy cuts of meat and stand for extended periods in a hot kitchen environment
- Genuine interest in barbecue as a craft — this is a real teaching role, not just labor
- Comfortable working around fire and heat safely
- Team player who can take direction and feedback well
- Food handler’s card (or willingness to obtain one)
- Prior BBQ, grill, or live-fire cooking experience a plus, but not required
Pay: $20.00 - $31.17 per hour
