We are seeking a Seafood Fish Cutter to cut, prepare, and portion seafood products, including Tuna and Swordfish, while maintaining quality, food safety, and sanitation standards.
Responsibilities
- Cut, fillet, trim, and portion a variety of fish, including Tuna and Swordfish
- Prepare seafood products according to customer and company specifications
- Inspect seafood for quality and freshness
- Minimize waste and maximize product yield
- Follow food safety, HACCP, and sanitation procedures
- Maintain proper product temperatures and handling practices
- Keep work areas clean, organized, and sanitized
- Safely use knives and seafood processing equipment
- Meet daily production and productivity goals
- Stock and organize seafood products and packaging materials
- Shuck clams and oysters as required
- Assist with inventory counts
- Help train and onboard new employees

Requirements
- Previous experience as a fish cutter, butcher, seafood processor, or similar role preferred
- Experience cutting and preparing Tuna and Swordfish preferred
- Strong knife skills and ability to work in a fast-paced environment
- Knowledge of seafood products and cutting techniques
- Ability to work in cold, wet conditions
- Ability to stand for extended periods and lift up to 50 lbs.
