ESSENTIAL FUNCTIONS
- Oversee the daily operations of all kitchen outlets, including restaurant and employee cafeteria.
- Supervise, coach and develop culinary employees to ensure quality performance.
- Ensure all food is prepared, presented, and served in accordance with hotel standards and recipes.
- Maintain compliance with all NYC Department of Health regulations, food safety standards, and sanitation requirements.
- Maintain food quality, consistency, and portion control standards.
- Assist with menu implementation, recipe execution, and special event planning.
PREFERRED QUALIFICATIONS
- Associate's degree or higher in Culinary Arts or Hospitality, or related field.
- Minimum 2 years of progressive culinary experience in a unionized hotel.
- Experience in a union hotel is preferred.
- NYC Food Protection Certificate required or ability to obtain.
- Strong knowledge of food safety regulations and sanitation practices.
- Experience managing labor and food cost controls.
- Excellent organizational and time management abilities.
- Knowledge of inventory management and purchasing.
- Proficient in Microsoft Office specifically Word, Excel and Outlook.

- Coordinate food production between multiple kitchen stations.

- Ensure proper operation and maintenance of kitchen equipment.
- Train, mentor, and evaluate culinary employees.
- Conduct daily pre-shift meetings.
- Promote teamwork and accountability throughout the kitchen.
- Ensure compliance with HACCP principles and food handling procedures.
- Conduct daily sanitation inspections.
- Monitor food temperatures and storage practices.
- Ensure compliance with NYC Health Department regulations.
- Manage inventory levels and ordering.
- Monitor food cost and minimize waste.
- Conduct weekly and monthly inventory counts.
- Analyze purchasing trends and identify cost-saving opportunities.
- Ensure proper receiving and storage procedures.
- Conduct routine quality inspections of prepared food.
- Ensure consistency in presentation and portion sizes.
- Requires good communication skills, both verbal and written.
- Must be eligible to work in the U.S.
