Mamma Luca is in Portsmouth and features wood-fired pizza & homemade pasta. Chef-owner Mario Laposta has over 20 years of learning and working in some of the best pizzerias in Rome, Campania, New York, and Boston. Mamma Luca specializes in artisan pizzas and is a family-owned Italian eatery. We take pride in using high-quality ingredients, especially Mario's own blend of milled artisanal flour, local farm produce, in-house butchery, traditional/modern techniques, and innovative flavors, to deliver exceptional dining experiences. We make EVERYTHING from scratch here in-house. We seek a passionate and experienced Head Pizza Maker to help lead our kitchen team and uphold our commitment to culinary excellence.
Key Responsibilities:
- Oversee all pizza-making operations, including dough and topping preparation, assembly, and baking.
- Craft high-quality pizzas
- Ensure consistency in taste, presentation, and quality for every pizza served
- Train, mentor, and supervise kitchen staff to maintain productivity and high standards.
- Monitor inventory levels and coordinate with Chefs
- Maintain cleanliness and adhere to health and safety standards
- Collaborate with management to develop seasonal menu items and specials
Qualifications:
- Proven experience as a pizza maker, preferably in a leadership role.
- Expertise in dough preparation, stretching, and working with pizza ovens (wood-fired)
- Strong understanding of ingredient pairings and pizza trends
- Leadership skills with the ability to inspire and manage a team
- Excellent time-management and organizational skills
- Passion for food, creativity, and attention to detail
