Overview
We are seeking an experienced, passionate Scratch Baker to join our team.
In this role, you will be responsible for scaling, mixing, shaping, and baking our daily menu. The ideal candidate has strong technical knowledge of fermentation, dough handling, or pastry arts, and thrives in the focused energy of a morning production shift.
Core Responsibilities:
- Production & Execution: Scale, mix, shape, proof, and bake a variety of doughs, batters, and pastries according to established recipes and quality standards.
- Time Management: Efficiently manage tight production schedules to ensure the retail cases are fully and beautifully stocked by opening time.
- Quality Control: Monitor oven temperatures, proofing times, and ingredient quality to maintain absolute consistency in taste, texture, and presentation.
- Inventory & Prep: Assist with ordering, checking in deliveries, inventory rotation (FIFO), and prepping fillings, glazes, etc.
- Kitchen Sanitation: Maintain an impeccably clean work station, wash mixing bowls/tools as you go, and follow all food safety codes.
Qualifications:
- Experience: Minimum 2+ years of professional baking experience in a high-volume, scratch-cooking or commercial bakery environment.
- Technical Skill: Solid understanding of baker's percentages, yeast/fermentation control, temperature management, and commercial equipment (ovens, mixers, etc.).
- Schedule: Ability to work morning shifts (typically starting at 8:00 AM), including weekends (Sunday).
- Stamina: Must be able to lift up to 50 lbs (flour/sugar bags) and stand for long periods.
- Certification: Food Handler or ServSafe certification is highly preferred.
