Job Summary
We are seeking an experienced and passionate Head Sushi Chef to lead our omakase program. This role oversees daily sushi operations, menu execution, inventory, and team development while upholding the highest standards of quality, technique, and hospitality. The ideal candidate is a skilled leader with a deep respect for traditional Japanese cuisine and a commitment to delivering an exceptional omakase experience.
Responsibilities
- Lead, mentor, and develop the sushi team while fostering a collaborative, high-performing culture.
- Execute and refine seasonal omakase menus using premium ingredients and refined techniques.
- Oversee fish sourcing, handling, storage, and preparation.
- Manage inventory, purchasing, and food costs while minimizing waste.
- Maintain exceptional standards for knife skills, sushi preparation, and presentation.
- Ensure compliance with food safety, sanitation, and seafood handling standards.
- Partner with restaurant leadership to support operational excellence and continuous improvement.
Preferred Experience
- Extensive experience as a sushi chef in a high-end omakase, fine dining, or upscale Japanese restaurant.
- Previous experience leading and developing a sushi team.
- Expert knowledge of traditional sushi techniques, fish fabrication, knife skills, and premium ingredients.
- Strong understanding of food safety, sanitation, and HACCP standards for seafood.
- Experience with inventory management, purchasing, scheduling, and cost control.
- Excellent leadership, communication, and organizational skills.
- Ability to perform in a fast-paced, detail-oriented environment with a strong commitment to hospitality.

Pay: $72,800.00 - $88,400.00 per year
