Executive Chef – Brewpub

Position Summary
Rolling Waves Brewing & Distillery is seeking a passionate and experienced Executive Chef to lead the culinary operations of our growing brewpub. The Executive Chef will oversee all kitchen operations, develop creative menus that pair with our craft beer program, manage food and labor costs, ensure exceptional food quality, and build a strong, motivated kitchen team.
This role is essential in creating memorable guest experiences while supporting brewery events, private parties, catering, and the continued growth of the Rolling Waves brand.
Key Responsibilities
Culinary Leadership
- Lead and oversee all daily kitchen operations.
- Recruit, train, mentor, and supervise kitchen staff.
- Create weekly staff schedules and manage labor costs.
- Maintain a positive, professional, and team-focused kitchen culture.
Menu Development
- Design and continually improve the brewpub menu.
- Develop seasonal features, beer-pairing dinners, and limited-time specials.
- Collaborate with the brewing team to create food pairings that complement our craft beer selections.
- Standardize recipes, portion sizes, and plating for consistency.
- Analyze menu performance and customer feedback to improve profitability and guest satisfaction.
Food Quality & Service
- Ensure all food meets company standards for quality, taste, consistency, and presentation.
- Maintain efficient ticket times during service.
- Support brewery events, catering, festivals, beer releases, and private events.
- Work closely with front-of-house management to deliver an outstanding guest experience.
Kitchen Operations
- Manage inventory, purchasing, and vendor relationships.
- Control food costs, labor costs, and kitchen waste.
- Monitor kitchen equipment and coordinate maintenance when necessary.
- Maintain proper inventory levels to support daily operations.
Food Safety & Compliance
- Ensure compliance with all health department regulations and food safety standards.
- Maintain a clean, organized, and sanitary kitchen.
- Train staff on proper food handling, sanitation, and workplace safety.
- Maintain ServSafe standards throughout the kitchen.
Qualifications
- Minimum of 3 years of kitchen leadership or Executive Chef experience.
- Experience in a brewpub, brewery restaurant, gastropub, or high-volume restaurant preferred.
- Strong leadership, communication, and organizational skills.
- Experience with menu engineering, inventory control, and food cost management.
- Knowledge of beer styles and food pairing is preferred.
- ServSafe Certification preferred.
Physical Requirements
- Ability to stand for long periods.
- Ability to lift up to 50 pounds.
- Ability to work nights, weekends, holidays, and brewery events.
