Position Summary:
The Sushi Cook is responsible for preparing high-quality sushi and sashimi dishes while maintaining strict food safety standards and presentation excellence. This role requires attention to detail, strong knife skills, and the ability to work efficiently in a fast-paced kitchen environment.
Key Responsibilities:
- Prepare sushi, sashimi, rolls, and other Japanese-inspired dishes according to established recipes and presentation standards
- Maintain freshness and quality of all fish and ingredients
- Properly handle, store, and rotate seafood and perishable products
- Ensure compliance with food safety and sanitation guidelines
- Set up and break down sushi station daily
- Maintain a clean, organized, and efficient workstation
- Collaborate with kitchen team to ensure timely execution of orders
- Assist with inventory, ordering, and minimizing waste
Required Experience & Skills:
- 2+ years of experience as a Sushi Cook or in a similar role
- Strong knife skills and knowledge of fish fabrication
- Familiarity with traditional and modern sushi techniques
- Understanding of food safety, sanitation, and HACCP standards
- Ability to work in a high-volume, fast-paced environment
- Strong attention to detail and consistency in presentation
- Team-oriented mindset with good communication skills
- Flexibility to work nights, weekends, and holidays
Preferred Qualifications:
- Experience in upscale or high-volume restaurants
- Knowledge of Japanese cuisine beyond sushi
- Passion for culinary creativity and continuous learning
