THE OPPORTUNITY Join voco Sarasota during an active food and beverage relaunch. This is a build-and-lead assignment for a visible operator who wants to shape the team, systems, guest experience and future growth of the restaurant and bar.
voco Sarasota is seeking a hands-on Food & Beverage Manager to lead the hotel's restaurant, bar, grab-and-go and catering execution. The manager is primarily assigned to the 3:00-11:00 p.m. shift, providing accountable leadership during dinner, bar service and closing operations. This is not a desk-only position: the successful candidate will lead from the floor, coach in real time and build reliable systems while operating the business.
What you will lead
- Own the readiness, execution and close of restaurant, bar, grab-and-go and catered-event operations.
- Lead pre-shifts, monitor guest flow and ticket times, resolve concerns and coordinate kitchen, bar and service teams.
- Recruit, schedule, onboard, train and coach cooks, bartenders, servers and F&B attendants.
- Protect food safety, sanitation, responsible alcohol service, cash control, security and required opening and closing standards.
- Manage inventory, ordering, pars, receiving, rotation, waste, labor productivity, comps, voids and food and beverage costs.
- Maintain recipe, portion, plating, beverage and service standards while supporting thoughtful menu refinement.
- Coordinate with hotel leadership, front desk, sales, maintenance and overnight teams; serve as evening Manager on Duty when assigned.
- Support catering, grab-and-go, promotions, public events and local partnerships as operational readiness permits.

- A trained, accountable and increasingly stable team with schedules aligned to business demand.
- Consistent guest experience, improving public reviews and prompt recovery when standards are missed.
- Sales, beverage mix, labor, food cost, alcohol cost, waste and prime cost are measured and actively managed.
- SOPs, checklists, recipes, maps, pars and routines are used consistently without dependence on outside support.
What you bring
- At least three years of progressive food and beverage experience, including two years in a supervisory role; equivalent experience and education may be considered.
- Demonstrated ability to lead dinner and bar service, manage multiple operating areas and coach a team during live service.
- Working knowledge of scheduling, labor productivity, purchasing, inventory, menu costing, beverage controls and POS reporting.
- Ability to recruit, interview, onboard, train, document performance and hold associates accountable with professionalism.
- Clear communication, sound judgment, calm urgency, discretion and disciplined follow-through.
- Food-safety manager certification, or the ability to obtain it within the required period; responsible-alcohol-service certification as required.
- Hotel experience is preferred; candidates without hotel experience must be able to quickly learn MOD and cross-department responsibilities.
Schedule and physical requirements
- Primarily 3:00-11:00 p.m., five shifts per week. Evening, weekend and holiday availability is required; occasional other shifts may be needed for meetings, inventory, training, hiring, events or coverage.
- Ability to stand and walk for extended periods, work throughout kitchen, restaurant, bar and hotel areas, and frequently lift or move up to 50 pounds, with reasonable accommodation where applicable.
