Delmonico Grill is looking for a highly experienced fine dining professional to join our team as a Server. The hired candidate will possess 5+ years of relevant experience, having worked in a fine dining setting before and possessing a strong knowledge of wine pairings and steak cuts and preparation as well as knowing the fundamental steps of services.
About Delmonico Grill
Established in 2007 by local Chef Pete Franklin and owned and operated today by Chef Benjamin Klinkel, Delmonico Grill has been Rapid City's premier fine dining steakhouse for nearly 20 years. Today, we carry on our tradition of providing excellent food and great service in a breath-taking atmosphere.
About the Role:
The Server will go above and beyond the "nuts and bolts" of order taking and food running by providing excellent, guest-centered, hospitality. You will be great at reading the energy of your guests and matching it as well as anticipating your guests needs and exceeding their expectations. There will be a mix of days and nights and some weekends, so open availability is crucial.
Duties include
- Greeting the table: within minutes of their arrival, greeting guests with a friendly and welcoming demeanor. Informing them of any featured items or recent menu additions.
- Menu knowledge: answering guests' questions about the menu and guiding them towards informed orders, taking their preferences and dietary considerations into account. Knowing the menu like the back of your hand and staying on top of 86's or item counts.
- Mise En Place: pre-bussing the table of any and all used flatware and dishes and resetting the table for the coming course. Ensuring guests have the proper utensils before the food lands and asking if they require anything else after food is delivered. Running food in concert with other staff members or at the request of others.
- Order taking: ensuring guests are neither hurried into an order nor waiting for their server to come back to them. Taking guest orders according to a standard numbered seating schema so other staffers know who ordered what when food arrives. Taking guest orders accurately with special attention to requests and dietary concerns and relaying the order via toast POS. Checking IDs in keeping with state and federal regulations for alcohol sales.
- Guest satisfaction: following up with each table shortly after each course and in-between courses. Routinely refilling water and soda and asking if the guest would care for another non-refillable item. Actively asking how the guests find their food and reading their responses carefully. Not accepting "its fine" as an answer, but proactively working towards ensuring guest satisfaction by offering re-fires or substitutions. Doing your part to minimize the interval between each step of service. Involving a manager whenever you feel it is warranted.
- Teamwork: Attending menu launches and menu item demos. Noting preparation of new food items, presentation, allergens and overall flavor profiles. TASTING THE FOOD! Being mindful of your "fire-times" and making sure that you are sending accurate and detailed orders back to the kitchen. Working with the other FOH team members to ensure each and every guest is catered to and no one is "left hanging." Taking tables according to a rotation without complaint and having faith that Delmonico Grill is invested in your success.
- Sidework and pride in your workplace: Stocking server-stations, togo items, linens and other service essentials before, during and after each shift and according to a rotating side-work list. Maintaining a clean and orderly working environment during the shift by clearing out messes and wiping down and refreshing work areas as we go. Work clean. Ensuring that tables, work stations, coolers and floors are all cleaned and sanitary in keeping with guest expectations, company standards, and food safety guidelines.
- Professional conduct: working towards solutions rather than fixating on problems. Treating your co-workers with respect and empathy. Providing constructive feedback to others while avoiding negativity. Bringing your A-game as well as your unique and wonderful self to each and every service!
Key requirements:
- The ability to work on your feet for 8+ hours per day in a busy and sometimes hot environment.
- The ability to lift and carry loads up to and exceeding 40 lbs as well as the ability to go up and down stairs repeatedly throughout the shift.
- A strong knowledge of food, specifically steaks, different cuts of meats, different temperatures/preparations, and how that might look to a guest.
- A strong knowledge of wine and wine pairings and the basic knowledge of how to perform a wine presentation.
- Excellent verbal communication, the knack for active and engaging listening, and strong written communication skills.
- The affore-mentioned past experience. Applicants with less experience or a lack of fine dining experience will not be considered for the role, and need not apply.
