Nobu, one of the most recognized Japanese restaurant brands in the world, is seeking an experienced Sushi Prep Cook to join our team at Nobu Atlanta.

The Sushi Prep Cook is responsible for preparing ingredients and supporting the Sushi Chef team to ensure efficient daily operations and exceptional food quality. This position requires attention to detail, organization, proper food handling, and the ability to work efficiently in a high-volume, upscale restaurant environment.
While the Sushi Prep Cook is expected to perform the duties outlined below, one of the most important aspects of this role is working closely with management and fellow team members to maintain Nobu's standards of quality, cleanliness, teamwork, and hospitality.
Responsibilities:
- Prepare ingredients for the sushi station according to Nobu recipes, specifications, and quality standards.
- Assist with the preparation of fish, seafood, vegetables, rice, sauces, garnishes, and other ingredients used by the sushi team.
- Properly portion, label, date, rotate, and store prepared food and ingredients.
- Inspect ingredients for freshness, quality, and proper condition before preparation and use.
- Maintain proper food temperatures and follow established food safety and sanitation procedures.
- Maintain a clean, organized, and properly stocked prep and sushi work area throughout the shift.
- Complete assigned daily prep lists accurately and within established timeframes.
- Ensure appropriate quantities of ingredients are prepared to support anticipated business volume.
- Minimize food waste through proper preparation, portioning, handling, and storage.
- Safely use knives and other commercial kitchen equipment according to established procedures.
- Follow proper procedures regarding food allergies, dietary restrictions, and prevention of cross-contamination.
- Communicate effectively with Sushi Chefs, culinary team members, and management regarding preparation needs and product availability.
- Complete assigned opening, closing, cleaning, and sanitation duties.
- Follow all company policies, food safety requirements, sanitation standards, and health department regulations.
- Maintain professionalism, composure, and attention to detail while working in a fast-paced environment.
- Assist other culinary team members as needed to support restaurant operations.
- Perform other duties as assigned by management.
Required Skills/Qualifications:
- Minimum of 2 years of sushi or sushi preparation experience, preferably in a high-volume, upscale or fine-dining restaurant.
- Knowledge of sushi ingredients, food preparation techniques, and proper food handling practices.
- Strong knife skills and ability to safely operate commercial kitchen equipment.
- Ability to follow recipes, preparation instructions, portion standards, and established procedures.
- Strong attention to detail, organization, and cleanliness.
- Must be punctual, dependable, and able to maintain regular attendance.
- Must communicate effectively with management and team members.
- Ability to maintain composure and work efficiently while multitasking in a fast-paced, high-stress environment.
- Excellent interpersonal and communication skills.
- Demonstrates patience, professionalism, teamwork, and integrity.
- Must be available to work a flexible schedule, including varied shifts Sunday through Saturday, weekends, holidays, and lunch and/or dinner shifts based on business needs.
Physical Requirements:
- Ability to stand and work for extended periods.
- Ability to bend, reach, lift, carry, and perform repetitive motions associated with food preparation.
- Ability to safely use knives and other commercial kitchen equipment.
- Ability to work in refrigerated and kitchen environments with varying temperatures.
- Ability to safely lift and carry items as required by the position.
