Job Title: Back of House-3 (BOH-3 Mid-Level) Status: Non-Exempt/Hourly
Primary Job Function:Under the direction of Someone on the Kitchen Management Team or GM, the BOH-3 position is considered Mid-level. Supervision is relaxed on assignments of a routine and straightforward nature but is closer in terms of a more difficult and complex nature. The goal for this incumbent is to learn and become competent in all duty stations. Provide assistance and guidance to Trainees, Beginners, and Intermediate Level employees. Monitor stations and assist with store opening/closing and daily operations. Maintain all cleanliness, safety, and equipment operational issues. Track and place product reorders per COG Guidelines within a 90-day probational period.
General Duties:
· Compliance with all company policies and procedures Genki Sushi USA, Inc. sets forth.
· Required to adhere to the store’s daily, weekly, and monthly cleaning lists.
· Ensures customers are consistently satisfied with their dining experience by monitoring guest comment cards and personally inquiring with customers daily.
· Enforces the company’s cleanliness and sanitation standards.
· Reminds BOH staff to have cleaning tasks done consistently.
· Assists management to ensure the restaurant complies with state OSHA and food safety regulations.
· Learn and become competent in all duty stations.

Essential Duties:
· Perform all essential job functions as needed by a BOH staff member:
o Prep Team/ Noodle Producer
o Tare Station
o Soup/Noodle Station
o Topping Station
o Sushi Station
o Fryer Station
o Dishwasher
· Able to efficiently assist and run every station in the back of the house, including but not limited to the following: prep, tare station, soup/noodle station, topping station, sushi station, fryer station, dishwasher, etc.
· Ensures that all food is prepared correctly according to the company’s recipes, procedures, standards, and projected sales volume.
· Ensures products delivered consistently meet food product quality, presentation, and portion control.
· Ensures the proper rotation of all food products using the FIFO method.
· Assists in preparing work schedules for BOH staff.
· Ensures proper staffing for each shift.
· Able to prepare and complete daily opening, mid, and closing duties as management assigns.
· Consistently maintains kitchen and center cleanliness, sanitation, and side work duties on time.

· Has thorough knowledge of vendor ordering systems.
· Accurately controls and correctly submits vendor orders.
· Assists with properly storing and organizing timely deliveries, especially fresh and frozen items.
· Assists with inventory recording and control.
· Follows safe stock levels according to company standards.
· Ensures the temperature of all kitchen refrigeration and all freezer units comply with the respective State’s OSHA and/or Food Safety Program.
· Communicate and report to Someone on the Kitchen Management Team or GM on all BOH staff issues, operational issues, and service concerns daily and/or immediately if necessary.
· Performs other assignments and duties as determined by the Someone on the Kitchen Management Team or GM.
Other Duties/Functions:
· Works with management to consistently control actual COG % and labor% based on sales volume.
· Collect invoices daily and submit them to the Head Office accordingly.
· Responsible for checking and working all scheduled shifts as posted.
· Attends mandatory bi-weekly supervisor and monthly staff meetings.
· Follows all State OSHA requirements.
· Follows all State Food and Sanitation requirements.

· Able to remember, recite, and promote menu items.
· Able to upsell menu items and promotions.
· Knowledge about alcohol service, ID checks, and a person’s alcohol tolerance when and how to stop service to an intoxicated customer (applicable to stores with liquor licenses).
Working Conditions:
· Primarily works indoors in a restaurant environment.
· Will be exposed to abnormal temperatures as required by job duties (kitchen refrigerators, freezers, and fryer).
· Exposure and use of chemicals will be required for kitchen cleaning and sanitation.
Work Hours:
· Will work between 6-8 hours per shift. Minimum 30 hours per week. It may vary based on operational needs.
· Required to work nights, weekends, and holidays as needed.
Requirements:
· Must be 18 years or older
· Minimum 6-12 months of work experience at a Mensho Hawai’i / Genki Sushi USA restaurant and the ability to perform BOH staff duties with little or no supervision.
· Minimum one year of work experience in a coffee shop, restaurant, or related industry with at least one year of work experience in a supervisory capacity position - desired.
· Neat, clean, and well-groomed appearance.
· Basic knowledge of food and beverage, service standards, customer relations & etiquette.
· Able to serve alcohol (applicable to stores with liquor licenses) if required.
· Tuberculosis (TB) Clearance by the Department of Health’s Food Handler guidelines (Hawaii only).
· Appropriate state’s Food Handlers Card (Washington only).
· ServSafe Certification (if required).
· Read, write, and speak English fluently.
· Ability to communicate clearly, both verbally and in written form.
· Computer knowledge, Windows, etc.
· Must thoroughly understand all BOH Staff job requirements and be able to fully train according to company standards.
Physical Job Requirements:
· Constant: Standing and walking.
· Frequent: Bend, stoop, reach and twist.
· Ability to lift to 40lbs and move up to 50lbs through a crowded room continuously through the shift.
· Operate and clean kitchen equipment including but not limited to Rice washer, mandolin slicer, rice mixer, noodle boiler, noodle maker, food processors, butane torches, meat grinder, sushi robot, fryer, gas appliances, and plate dishwasher.
· Must be able to operate, load, and unload trash compactor.
Pay: $19.00 per hour
