The Kitchen Supervisor – Closing Shift is responsible for overseeing daily kitchen operations, ensuring food safety compliance, supervising staff, and maintaining high standards of meal service and sanitation. This role ensures smooth execution of both lunch and dinner services while completing all required documentation and closing procedures.
- Conduct routine walk-throughs of the kitchen, storage areas, and refrigeration units to ensure cleanliness and organization
- Monitor and document refrigerator and freezer temperatures to ensure compliance
- Verify all food items are properly labeled and dated
- Identify cleaning or maintenance needs and assign tasks to appropriate staff
- Ensure adherence to sanitation standards and complete sanitation checklists
- Confirm arrival of scheduled staff and follow up on any absences
- Coordinate shift coverage when staff are unavailable
- Assist in kitchen operations as needed to maintain service continuity
- Provide direction and oversight to kitchen staff throughout the shift
- Supervise lunch service (11:30 AM – 12:15 PM) and dinner service (4:30 PM – 5:15 PM)
- Ensure meal tray accuracy through random tray checks (minimum of two per truck)
- Conduct and document test trays during service periods
- Maintain quality and consistency of food service delivery
- Conduct meal rounds following each service period
- Visit all floors to ensure proper food distribution and service quality
- Check pantry refrigerators and freezers; document temperatures
- Report any maintenance or sanitation concerns to appropriate departments
- Ensure dish room and pot room are clean, organized, and functioning properly
- Review and maintain temperature and sanitizer logs
- Perform final kitchen walk-through to verify cleanliness and compliance
- Complete all required logs, including production and sanitation reports
- Post production logs for the following day in designated areas
- Compile and submit all paperwork for review
- Communicate any important updates or issues to leadership
- Perform other duties as assigned
- Maintain flexibility to support overall kitchen operations and staffing needs
- Experience in food service or dietary operations preferred
- Knowledge of food safety and sanitation regulations
- Strong organizational and leadership skills
- Ability to multitask in a fast-paced environment
