Job Overview

Duties
- Prepare and assemble a variety of sushi rolls, sashimi, nigiri, and other Japanese delicacies with finesse and consistency
- Maintain high standards of food safety, sanitizing procedures, and cleanliness in all food handling activities
- Assist in menu planning by suggesting innovative sushi options and seasonal specials
- Execute food preparation tasks including poaching, braising, grilling, and food production to support overall kitchen operations
- Ensure proper knife skills are applied during ingredient preparation for optimal presentation and safety
- Support high-volume production needs during busy service hours while maintaining quality standards
- Follow food safety management protocols to ensure compliance with health regulations and sanitation standards
Experience
- Previous dietary department or dietary aide experience preferred, with a strong understanding of food handling and safety procedures
- Proven restaurant or culinary experience specializing in fine dining or Japanese cuisine highly desirable
- Demonstrated expertise in food preparation techniques such as poaching, braising, grilling, and general cooking methods
- Experience working in high-volume kitchens or catering environments that demand efficiency and precision
- Strong knowledge of food safety sanitizing procedures and food safety management practices
- Skilled in menu planning with an eye for detail, presentation, and flavor balance
- Excellent knife skills combined with a solid background in food industry standards for quality and safety
