Tanner's Wine & Tapas is an intimate wine bar focused on thoughtfully prepared small plates, handcrafted cocktails, and exceptional hospitality. We're looking for a dependable, self-motivated cook who enjoys working independently while taking pride in every aspect of the kitchen.
Position Summary
This is a solo kitchen position responsible for prep, cooking, plating, dishwashing, and maintaining an exceptionally clean and organized kitchen. You will execute service independently while ensuring every dish reflects the standards established by our Director of Culinary Development.
Because our kitchen operates with a lean team, this role requires someone who embraces ownership, stays organized, and understands that no task is beneath them. Everyone—including our front-of-house team—works together to keep the operation running smoothly.
ResponsibilitiesFood Preparation & Line Execution
- Complete all daily prep before service.
- Prepare sauces, dressings, proteins, vegetables, and menu components according to standardized recipes.
- Execute all menu items with consistency and attention to detail.
- Plate every dish according to presentation standards.
- Manage ticket flow efficiently while maintaining quality.
- Communicate menu availability and ticket times with the front-of-house team.
Kitchen Organization & Cleanliness
- Wash dishes, cookware, utensils, and equipment throughout each shift.
- Maintain an impeccably clean kitchen at all times—not just at closing.
- Keep workstations stocked, organized, and clutter-free.
- Complete opening and closing cleaning checklists.
- Follow all health department regulations and food safety standards.
- Assist with receiving and properly storing deliveries.
- Practice proper product rotation (FIFO) and inventory organization.
Ownership & Accountability
- Take full ownership of the kitchen during your shift.
- Identify what needs to be done without waiting to be asked.
- Keep prep levels sufficient for service.
- Notify management of inventory needs or maintenance concerns.
- Protect food quality, minimize waste, and maintain consistency.
- Work collaboratively with the service team to ensure an outstanding guest experience.
Qualifications
- Previous line cook experience required.
- Strong knife skills and prep experience.
- Ability to work independently with minimal supervision.
- Excellent organizational and time management skills.
- Ability to multitask in a fast-paced environment.
- Ability to lift up to 50 pounds and stand for extended periods.
- Food safety certification preferred (or willingness to obtain).

During our slower summer season, this position includes dishwashing responsibilities alongside cooking and prep. Our servers also assist with dishes whenever possible because we believe in supporting one another as a team. As business increases, we anticipate adding a dedicated dishwasher to allow our cooks to focus more fully on food preparation and execution.
