Alder & Oak is seeking an experienced Sous Chef to execute our Mediterranean-inspired menu. This role focuses on high-quality ingredients and wood-fired cooking techniques. We are looking for a disciplined and talented chef who takes pride in plate presentation, kitchen cleanliness, and consistency in a high-volume, scratch kitchen.
Vendor Ordering and Approval: Assist the Executive Chef in placing orders and ensuring all product has been delivered.
Payroll: Assist in making weekly scheduled and approving timesheets. Assure that all new hires are onboarding correctly and in a timely manner.
Staff Management: Be able to train, foster, and hold the BOH team accountable.
Cooking: Execute menu items to order with a focus on wood-fired techniques and Mediterranean flavors.
Quality Control: Ensure all food leaving the kitchen meets our standards for taste, temperature, and presentation.
Food Safety: Maintain a clean and organized workspace; follow all food safety, sanitation, and labeling procedures.
Efficiency: Work with a sense of urgency to maintain fast ticket times during busy lunch and dinner shifts.
Experience: 2+ years of leadership experience in a high-volume or upscale environment. 5+ years of line cook experience. Familiarity with wood-fired ovens is a plus.
Technical Skills: Strong knife skills and a solid understanding of various cooking methods and temperatures.
Physical Stamina: Ability to stand for long periods and work in a high-heat kitchen environment.
Teamwork: Ability to remain calm under pressure and communicate effectively with the Chef and kitchen team.
Availability: Must be available to work nights, weekends, and holidays.
