JOB SUMMARY
Under general supervision of the Dining Executive Chef, Manager or Supervisor the Utility Worker performs a variety of duties involving dishwashing, food delivery and the cleaning & sanitation of all kitchen areas. The Utility Worker will possess a genuine interest in and concern for the food service industry. The Utility Worker will possess a genuine interest in and concern for the food service industry and for geriatric, chronically ill and/or disabled persons. Must be able to fluently communicate in or to take or give direction or guidance in the English language.
PRIMARY ACCOUNTABILITY
A working knowledge of the practices and procedures in dishwashing and proper sanitation techniques. A professional appearance is to be maintained at all times.
ESSENTIAL FUNCTIONS

Regular attendance is considered an essential function of this position and is necessary for the efficient operation of the business.

Proper operation of a dishwashing machine and three-compartment sink to clean and sanitize all small wares.

Maintains HACCP records on a daily basis, monitoring temperatures of dish machines & ware washing sinks including the proper concentration of chemical usage and techniques.

Proper storage of all small wares after they have been cleaned and sanitized.

Transportation of food and supplies from the main kitchen to other production and service kitchens. Also assists in the delivery of meals, as required.

Cleans and sanitizes work area and equipment as assigned, including deep cleaning duties.

Proper daily cleaning (sweeping & moping) of production areas, storage rooms, dish room and walk-in floors.

Assist with the inspections of deliveries ensuring proper items and quantities are delivered and that temperatures are recorded while adhering to safe food handling practices.

Keeps the supervisor informed regarding levels of supplies and to any problems arising from food service preparation procedures and staff.

Assists with various duties relating to special activities and functions.

Ensures that the production area has been secured at the end of the shift. All equipment and lights are turned off and all doors and gates are locked.

Practices a safety first attitude reporting any unsafe behavior or working condition.

Attends departmental staff meetings, in-services and other related meetings as required.

Performs other duties as may be assigned.
