Casa Rondeña is a family-owned and operated winery nestled in the picturesque Village of Los Ranchos, New Mexico. Since 1995, Casa Rondeña has been committed to the growing and winemaking practices that respect its agricultural roots, and the greater community of Los Ranchos.
Position Summary
The Banquet Chef is responsible for the planning, preparation, execution, and presentation of all banquet and catered food service for weddings, private events, corporate functions, and special events. This position works closely with the Event Coordinator and Banquet staff to ensure every guest receives an exceptional culinary experience while maintaining the highest standards of food quality, safety, and presentation.
Essential Responsibilities
- Plan and prepare banquet menus according to event specifications.
- Execute food production for weddings, private events, corporate functions, and special events.
- Ensure all banquet meals are prepared and served on schedule.
- Supervise banquet kitchen staff during event preparation and service.
- Maintain consistency in food quality, portion control, and presentation.
- Assist with menu development and seasonal offerings.
- Coordinate production schedules based on banquet event orders (BEOs).
- Monitor food inventory and communicate ordering needs to management.
- Properly receive, store, and rotate food products using FIFO standards.
- Maintain a clean, organized, and sanitary kitchen in accordance with health department regulations.
- Ensure compliance with all food safety, sanitation, and workplace safety standards.
- Minimize food waste and maintain cost controls.
- Assist with staffing, scheduling, and training banquet kitchen employees as needed.
- Work collaboratively with event staff to ensure seamless event execution.
- Maintain a positive, professional attitude in a fast-paced environment.
Qualifications
- Minimum of 3 years of banquet or high-volume culinary experience preferred.
- Culinary degree or equivalent professional experience preferred.
- Strong knowledge of food preparation techniques and banquet production.
- Experience leading kitchen staff and managing multiple events simultaneously.
- Excellent organizational and time-management skills.
- Ability to remain calm and efficient under pressure.
- Current Food Handler Certification; ServSafe Manager Certification preferred.
- Flexible schedule, including evenings, weekends, and holidays.
Physical Requirements
- Ability to stand for extended periods.
- Lift and carry up to 50 pounds.
- Work in a fast-paced kitchen environment with exposure to heat, steam, and sharp equipment.
