Job Overview
Nicolas Matthew is a new diner, bakery, deli and take-home shop opening at 5900 Bosque Blvd in Waco — the old Dickey's BBQ, next to Drug Emporium.
This isn't a chain and it isn't a copy of anything else in town. We're a diner first. With a full breakfast, lunch and dinner menu made to order, from smash burgers to sirloin tips to our own pinsa pizzas. Behind that is a scratch bakery turning out cakes, breads, donuts and pastries from family recipes, and a deli where our meats are brined, seasoned, and roasted or smoked in house. We want to run out of things every day, because we'd rather run out than serve it a day old.
We're hiring people who are brand new to this as well as people who've done it for years. If you've got drive and you want to build something long-term, we want to talk to you.
Our bakery runs on house recipes like cakes, breads, donuts, cinnamon rolls, muffins, croissants, cookies and pastries. Several are family recipes going back decades. We bake fresh daily and we'd rather sell out than hold product over.
Baker
- Mix, proof, shape and bake breads, rolls, donuts and pastries
- Bake and assemble cakes to house recipe
- Fry and finish donuts, including our filled inside-out donuts
- Scale and measure accurately, every time
- Run production on a schedule so product is ready when the doors open
- Keep the bakery, mixers and ovens clean and in working order
Cake Decorator
- Fill, ice and finish cakes in buttercream, ganache and glaze
- Glaze, fill and decorate donuts and pastries
- Build and maintain the bakery case display through the day
- Box and package orders neatly
- Keep the decorating station and tools clean and sanitary
What we're looking for
- You cook the recipe the way it's written. You're also open to sharing your ideas — people here can pitch their recommendations or a special and see it go on the menu.
- Consistency. The same dish should taste the same on Tuesday as it did on Friday.
- A steady hand and an eye for how things look
- You move with urgency when it gets busy and take care of your station without being told
- Experience helps, but we'll train the right person from scratch
Pay: $14.00 - $30.00 per hour
