Job Description
The Associate General Manager (AGM) is the high-level operator of our dual-brand portfolio at Westfield Oakridge. This is a unique "hybrid" leadership role:
- Direct Execution: You are the primary "Working Manager" for Sbarro, responsible for the pizza and food line, dough production, and team pacing.
- Operational Administration: Own the "Back-of-House" engine for both units. This includes precise Inventory Management (FIFO), Vendor Ordering, Strategic Scheduling to optimize labor-to-sales ratios, and ensuring full compliance with health and safety audits.
- Executive Delegation: You oversee the Mrs. Fields Assistant Manager (AM), ensuring that the cookie operation runs autonomously and profitably under your guidance.
Your goal is to build a culture of high standards where the Mrs. Fields AM can manage the day-to-day while you drive the high-volume engine of Sbarro.
Key Responsibilities:
Sbarro Lead Operations (Working Manager — 70% of Time)
- The Line Lead: Physically command the Sbarro floor. You are the expert in "Mastering the Craft"—stretching dough, preparing recipes, and maintaining "Sbarro Gold" quality during high-volume rushes.
- Training & Standards: You personally train every Sbarro Team Member. You don't just tell them; you show them.
- Ongoing Systems: You maintain the "Audit Ready" state of the kitchen, managing inventory flow (FIFO), food safety, and equipment maintenance.
Operational Administration (Multi-Unit — 20% of Time)
- Profit First: You analyze the P&L for both stores. You look for ways to share resources (e.g., cross-training a Sbarro member to help at Mrs. Fields during a massive cookie order).
- Sales Driven: You ensure both stores are "remarkable." You drive the AM to innovate on Mrs. Fields displays while you lead the Sbarro team in high-energy "sampling" and upselling.
- Inventory & Ordering: Conducting weekly counts and placing orders to ensure zero stock-outs while minimizing waste.
- Labor Scheduling: Using sales data to draft schedules that ensure both stores are adequately staffed while hitting profitability targets.
- Compliance: Ensuring all digital logs, temperature checks, payroll submissions, and bank deposits are completed with accuracy.
Mrs. Fields Executive Oversight (10% of Time)
- Managing the Manager: Act as the direct supervisor to the Mrs. Fields AM. You provide the "Head" (strategy and audits) while they provide the "Hands" (daily baking and decorating).
- Quality Audits: Perform unannounced walk-throughs to ensure the store remains "Audit Ready" and ensure the product quality is high.
