Job Purpose: Responsible for the overall coordination and management of the kitchen.
Supervises: Assistant kitchen manager, kitchen shift manager, kitchen supervisors, kitchen hourly employees.
Job Tasks and Responsibilities:
I. Leadership
- Leads and directs 15-20 department employees.
- Provides clear direction and establishes performance expectations to achieve continuous improvement and increased productivity.
- Adapts to changes in direction and contributes positively to maximize the success of the company.
- Leads by example, nurtures team concept and promotes Cossetta Company culture at all times.
- Recruits, interviews and provides primary recommendations on department employee selection.
- Manages department employee performance which includes evaluation, recognition and performance correction.
- Coaches, trains and develops department employees.
- Demonstrates initiative and performs all activities as business deems necessary.
II. Service/Quality
- Provides, and requires from all Cossetta employees, a world class level of customer service and satisfaction.
- Ensures recipe ingredients meet quality standards required for all menu items.
- Responds to and promptly resolves all customer concerns or issues.
- Ensures the kitchen facility’s appearance, equipment, and maintenance conform to company standards.
III. Finance/Administration
- Develops, recommends, monitors and meets or exceeds the departmental fiscal budget.
- Develops and adjusts department employee work schedule and rest breaks as necessary to meet departmental needs; ensures adequate staffing levels at all times.
- Completes and submits daily reports and other administrative paper work.
- Performs monthly physical inventory and ensures completion of departmental preventive maintenance schedule.
- Protects confidential Cossetta information (e.g. recipes, techniques, financial data, etc.)
- Adjusts and approves employee time keeping records.
IV. Operations
- Knows and performs all tasks and responsibilities of kitchen department.
- Enforces and adheres to all established work rules, safety regulations, and company policies/procedures.
- Analyses sales/profit data and evaluates product success.
- Researches, identifies, recommends and monitors departmental vendors for service, product quality and competitive pricing.
- Ensures security of company property and grounds; conducts inspection of facility and grounds; takes corrective action as needed.
- Plans, organizes and directs all departmental operations; delegates tasks accordingly.
- Administers and coordinates ongoing training programs to ensure staff development and competency.
- Verifies inventory levels, performs price comparisons, and places orders for all department smallwares requests.
- Receives and verifies PO quantities on incoming shipments.
- Expedites incoming product orders (e.g. delivery dates, PO quantities, etc.)
V. Communication
- Works with employees to establish personal and departmental goals in order to support and achieve company objectives.
- Establishes and maintains frequent, timely and constructive communication with all employees, departments and management.
- Conducts department, management and employee meetings regularly to exchange information and improve communication.
- Attends and participates in department manager and employee meetings.
Pay: $64,630.00 - $76,095.00 per year
