We specialize in whole animal utilization, dry aging, house-made sausages, charcuterie, and specialty cuts for our retail shop and restaurant, Foothills Grange.
We are seeking a skilled butcher who is passionate about craftsmanship, high-quality meats, and working with whole animals. About You
You are an experienced butcher who takes pride in breaking down whole animals, cutting with precision, and creating high-quality retail cuts. You are comfortable working in a cold environment, handling large primal cuts, and following strict sanitation and food safety protocols. You work efficiently, maintain an organized workspace, and thrive in a team-oriented environment.
Key Responsibilities
Whole Animal Butchery & Processing
- Break down whole beef, pork, and poultry into primal and sub-primal cuts following shop standards.
- Portion and prepare specialty cuts for retail and restaurant use.
- Trim, grind, and process meat for sausage making, ground blends, and house-made products.
- Ensure proper storage, aging, and handling of all meats, maintaining quality and consistency.
Retail & Customer Service Support
- Assist customers in selecting cuts, providing knowledgeable recommendations for cooking and preparation.
- Maintain and stock the retail case, ensuring proper labeling, pricing, and freshness.
- Provide a welcoming, knowledgeable, and engaging customer experience.
Sanitation, Compliance, & Food Safety
- Follow strict sanitation protocols in accordance with Environmental Health Services and ServSafe guidelines.
- Keep tools, equipment, and workspaces clean and well-maintained throughout the shift.
- Properly store, rotate, and handle all raw and processed meats to prevent waste and contamination.
Inventory & Efficiency
- Assist with inventory tracking, ensuring accurate meat counts and proper rotation.
- Monitor product usage and yields, working to reduce waste and improve efficiency.
- Communicate with the team on product needs, upcoming specials, and any operational concerns.
Requirements
- Minimum 2 years of butchery experience, preferably with whole animal breakdown.
- Extensive knowledge of meat cuts, trimming, portioning, and storage.
- Experience using band saws, grinders, slicers, and knives with precision and safety.
- ServSafe Certification or willingness to obtain one.
- Ability to work in a cold environment (walk-in coolers, freezers, and cutting rooms).
- Physical ability to lift 50+ lbs, stand for long periods, and perform repetitive cutting tasks.
- Strong attention to detail, cleanliness, and food safety procedures.
- Flexible schedule availability, including weekends and holidays.
