About the Role
The Line Chef — Sauté is a station-level position on the BOH line at The Shelby. You will own the sauté station from prep through service, executing dishes to recipe standard on every plate. This role requires a cook who holds themselves to a high standard, works clean, communicates clearly, and takes ownership of their station without being directed to do so. Responsibilities
- Own the sauté station through all phases of service: prep, setup, execution, and breakdown
- Execute all dishes to recipe specification, including proper technique, portioning, and plating presentation
- Complete prep lists accurately and on time, maintaining par levels throughout service
- Maintain a clean, organized station at all times; food safety and sanitation standards are non-negotiable
- Communicate ticket times, product shortages, and service issues to the Sous Chef in real time
- Support other stations as needed and contribute to overall kitchen flow during service
- Follow FIFO, labeling, and storage procedures on every shift without exception
- Participate in line checks before service and hold your station to the standard set by the Chef de Cuisine
Qualifications
- Minimum 1 year of experience working a sauté or hot line station in a full-service, high-volume kitchen
- Working knowledge of classical cooking techniques, heat control, and timing under pressure
- Ability to execute consistently across a full service without supervision
- ServSafe Certification preferred
- Strong communication skills in a high-volume kitchen environment
- Flexible schedule availability including nights, weekends, and holidays
What to Expect
The Shelby operates a structured cook progression program. This role is evaluated against the culinary standards, recipe specifications, and station expectations set by the Chef de Cuisine. Team members who demonstrate ownership and consistency are developed and promoted from within.
Pay: $17.00 - $24.00 per hour
