- Ensure strict adherence to food safety regulations and sanitation standards across all kitchen operations.
- Coordinate shift management, including scheduling staff rotations and overseeing daily operational workflows.
- Train team members on proper food handling techniques, cooking methods, and service procedures.
- Oversee catering events and banquet functions involving sushi displays or specialized menu offerings.
- Maintain high levels of customer satisfaction by ensuring timely service and exceptional food quality.
- Collaborate with restaurant management to implement best practices in food production and service management.
Experience
- Proven experience as a Head Sushi Chef or Executive Sushi Chef in a fast-paced fine dining or hospitality setting.
- Extensive culinary experience with a focus on sushi preparation, knife skills, and seafood handling.
- Demonstrated leadership skills with supervising experience in a kitchen environment.
- Strong background in food safety protocols, sanitation standards, and dietary department regulations.
- Experience managing inventory control, food production processes, and catering operations.
- Familiarity with menu planning, shift management, and restaurant management principles.
- Knowledge of the food industry trends related to sushi cuisine and hospitality services.
