Position Summary:
The Restaurant Butcher is responsible for selecting, cutting, and preparing various types of meats to meet the restaurant's menu specifications. This role ensures that all meat products are of the highest quality, properly stored, and prepared in a safe and sanitary manner.
Position Responsibilities:
Meat Selection and Preparation:
- Select and purchase meats from suppliers, ensuring quality and cost-effectiveness.
- Cut, trim, debone, tie, and grind meats such as beef, pork, poultry, and fish according to menu requirements.
- Prepare special cuts of meat ordered by customers or required for specific dishes.
Inventory and Storage:
- Receive, inspect, and store meat upon delivery to ensure freshness and quality.
- Monitor inventory levels and communicate with management regarding ordering needs.
- Store meats in refrigerators or freezers at the appropriate temperatures to maintain quality and prevent spoilage.
Equipment Maintenance and Sanitation:
- Sharpen and maintain knives and other butchery tools to ensure efficient and safe operations.
- Clean and sanitize work areas, equipment, and utensils in compliance with food safety standards.
- Adhere to all health and safety regulations, including proper handling and storage of meat products.
Collaboration and Customer Service:
- Work closely with chefs and kitchen staff to fulfill meat preparation requirements for various dishes.
- Provide exceptional customer service by answering questions and assisting with special orders.
Qualifications:
- Proven experience as a butcher or meat cutter, preferably in a restaurant setting.
- In-depth knowledge of meat preparation techniques, cuts, and cooking methods.
- Ability to use hand tools, stand or walk for extended periods, lift heavy items, and work in cold environments.
- Strong attention to detail and commitment to maintaining high standards of cleanliness and safety.
- Excellent communication and customer service skills.
- Formal training in meat cutting or culinary arts is advantageous.
