We are seeking an experienced, energetic, and highly organized Sous Chef to join our leadership team at Nighthawk at The Baby Grand Hotel restaurant serving lunch and dinner during the week, and brunch and dinner on weekends. This is a hands-on leadership role for a chef who thrives in a fast-paced environment and is passionate about consistency, team development, and hospitality.
Responsibilities
- Assist the Executive Chef in all daily kitchen operations.
- Lead and supervise kitchen staff during high-volume lunch, brunch, and dinner services.
- Ensure all food is prepared and presented according to established recipes and quality standards.
- Train, coach, and mentor cooks to maintain consistency and continuous improvement.
- Monitor food quality, portioning, plating, and execution throughout service.
- Maintain a clean, organized, and food-safe kitchen environment at all times.
- Assist with inventory management, ordering, receiving, and product rotation.
- Help control food cost through proper prep, portioning, and waste reduction practices.
- Support scheduling, labor management, and team accountability initiatives.
- Ensure compliance with all health department and company standards.
- Step into station leadership roles as needed and lead by example during service.
Qualifications
- Minimum 3 years of Sous Chef or Kitchen Management experience in a high-volume restaurant.
- Proven experience managing busy lunch, brunch, and dinner services.
- Strong understanding of Mediterranean cuisine and ingredients preferred.
- Demonstrated ability to lead, motivate, and develop kitchen teams.
- Passion for training and maintaining consistency across all menu items.
- Excellent communication and teamwork skills.
- Strong organizational skills with attention to detail.
- Experience with inventory management, ordering, and food cost controls.
- Ability to remain calm and effective under pressure.
- Current Food Handler Certification; ServSafe Manager Certification preferred.
- Reliable transportation is required. Coronado's unique location and bridge access make punctuality and dependable transportation essential for this position.
- Ability to work evenings, weekends, holidays, and extended hours as business demands.
