JOB TITLE: Dishwasher/Pot washer

SUPERVISOR: Executive Chef
JOB QUALIFICATIONS: Ability to work a variety of shifts as needed (i.e., day, night, and weekend). Fluent in written and spoken English. Excellent people skills.
ESSENTIAL FUNCTIONS: Clean all areas of kitchen, china, glassware, silverware, and hollowware; must properly store items after cleaning. Assist cooks with basic food preparation and storing newly delivered foods. Must be able to stand without sitting for a minimum of 4 hours. Must be able to lift and carry (a minimum of ten feet) at least forty pounds.
JOB DUTIES:
· De-tarnish, wash and store all silverware (flatware, hollowware, and trays). Burnish as needed.
· Set up and operate the dishwashing machine. Assure that it is operating correctly; tell Chef if it is not.
· Prepare glassware, china, and etcetera, for running through the dishwasher. Wash and store all items.
· Turn off and clean the dishwasher after each day. Use de-lime chemical on the inside of the machine weekly.
· Sweep and mop the floors daily. Scrub the floors with a brush weekly.
· Break down all boxes and throw away all the garbage throughout the day.
· Responsible for the organization, cleanliness, and sanitation of the dish washing area and pot washing area.
· Wash floor mats daily. Clean all sinks at end of each day.
· Clean worktables, shelves, and cabinets daily.
· Scrape and prepare dirty cooking utensils and kitchen pots & pans for washing.
· Wash all kitchen utensils and pots in hot, clean, soapy water; rinse in hot water and sanitize.
· Safely store all kitchen utensils and pots.
· Assist in putting away deliveries. Rotate as needed. Put ice on fresh seafood and chicken daily.
· Clean walk-in coolers & freezers.
· Assist in food preparation and the plating up of banquet/party meals.
· Assist the staff in “Café 626” by collecting and delivering their requested foods and supplies.
· Assist in administering the employee meals.
· Clean all ovens twice per month (work on a rotating basis).
· Clean the fryer (and properly dispose of old oil) once per week.
· Clean exhaust hoods twice per month. Clean stovetops and grills daily.
· Keep paper towels supplied in the kitchen and at hand washing sinks. Keep hand soap supplied.
· Safely store all cleaning chemicals and supplies. Tell the Chef if any chemicals need reordering.
· Closing duties: Assure that all equipment is off, trash is thrown out, and lights are turned off.

DEPARTMENTAL POLICIES:
· PTO days are granted based on member needs and club events. Days off will be determined on a first come, first serve basis. No exceptions.
· Unpaid days off in excess of PTO days are permitted with supervisor approval.
DEPARTMENTAL DRESS CODE:
· No earrings or other jewelry except for a plain (no gems) wedding band and wristwatch.
· Clean and proper uniform (as supplied by the Club).
· If working with food, hat or net to restrain hair (type approved by supervisor).
GENERAL:
· It is your responsibility to be familiar with the WAC Personnel Manual.
