Full Job Description

<Overview>

Ankeny Vineyard is a small vineyard located south of Salem. We are family owned and are looking for an Executive Chef that can maintain our standards within the concept we have developed, while also improving upon the model and making it your own.

<Responsibilities>

Lead and supervise all kitchen operations, ensuring smooth service with minimal wait times and maintaining consistent high standards of food quality and service.
Develop standard menus on a seasonal basis that have a wide ranging appeal. Developing specialty menus for wine pairings dinners, large banquet events, brunch menus, and special one off events.
Oversee food preparation, food quality, and service to ensure consistency and quality for all guests for normal fare or special events.
Manage inventory control - including ordering, stock rotation, and waste reduction to optimize food costs and utilize all products to the best of your ability.
Supervise and mentor staff, fostering a collaborative environment that encourages skill development and teamwork. Preparing them to be more skilled than when they arrived and ready to work at more challenging locations once they leave.
Ensure compliance with food safety regulations under Department of Agriculture and maintain rigorous sanitation standards across all kitchen areas.
Coordinate banquet events, wine pairings dinners, club pick ups, and special functions with precision to deliver memorable guest experiences.
Oversee kitchen scheduling, shift management, and staffing levels to meet operational demands efficiently and for timely service during the busiest days.

<Qualifications>

At least 3 years culinary experience as an Executive Chef with a strong background in classical and contemporary cuisines that compliment wine.
Demonstrated expertise in banquet, fine dining, and high volume service.
Strong knowledge of dietary restrictions and substitutions, food safety protocols, and inventory management practices.
Exceptional leadership skills with the ability to motivate and develop kitchen staff.
Extensive experience in menu planning with seasonality focus, utilizing estate garden ingredients, kitchen management, and high volume food service operations.
Familiarity with creating service systems, inventory control, scheduling, and maintaining standards.
Excellent communication skills coupled with a passion for hospitality and delivering outstanding guest experiences.

This is a very unique position for an Executive Chef in the wine industry due to the volume of food service along with the high volume of special events and pairings dinners we perform.
