Full Job Description

A Production Manager position is open at Dudes Donuts, come join our team! We’re looking for someone to join our tight-knit team with similar values of collaboration, hard work and integrity, quality-orientation, and a detail-oriented approach each day.

Dudes Donuts is a small batch, 100% plant-based and gluten free donut kitchen located in Port Orchard, Washington. Since 2019, we have been a wholesale production bakery and produce baked artisan donuts for coffee shops, lifestyle cafes, and online sales. We also operate our own retail store on Bay Street in downtown Port Orchard, WA and conduct a number of retail pop-ups each season to further brand awareness.

Position Summary

The Bakery Production Manager is responsible for leading the day-to-day production of our vegan and gluten-free bakery products.

This is a hands-on leadership role. The Production Manager works alongside the bakery team while making sure production is organized, products are made correctly and on time, quality standards are maintained, and the bakery operates safely and efficiently.

The Production Manager is also responsible for the day-to-day use and accuracy of our production management system, ensuring production schedules, recipes, inventory information, and completed production are kept current.

The ideal candidate is an experienced baker who enjoys both making great products and leading a small team. They are organized, dependable, detail-oriented, and comfortable jumping in wherever needed to get production completed.

Key Responsibilities

Bakery Production

Lead and participate in daily bakery production, including mixing, baking, finishing, packaging, and cleaning.
Create and manage daily and weekly production schedules based on retail and wholesale needs.
Use our production management system to plan, organize, and track daily production.
Keep production schedules and monthly menu changes accurate and up to date in the system.
Make sure products are produced in the correct quantities and ready on time.
Follow recipes and production procedures consistently and at targeted efficiency levels
Troubleshoot production issues and make adjustments when necessary.
Help improve production flow and organization as the bakery grows.

Product Quality & Development

Maintain high standards for product taste, texture, appearance, size, and freshness.
Ensure recipes are followed accurately and consistently.
Understand the unique requirements of vegan and gluten-free baking.
Identify and correct quality problems before products leave the bakery.
Help create, test and introduce new products and recipes into regular production.
Ensure current recipes, yields, batch sizes, and other production information are accurately reflected in the production management system.

Team Leadership

Lead, train, and support a small team of bakers and production employees.
Assign daily responsibilities and make sure everyone understands production priorities.
Work alongside the team during production and step into any production position when needed.
Train employees on recipes, baking techniques, equipment, food safety, cleaning procedures, and proper use of the production management system.
Help create a positive, organized, and accountable work environment.
Assist with hiring, scheduling, and employee performance as needed.

Food Safety & Cleanliness

Maintain a clean, safe, and organized bakery.
Ensure proper food handling, sanitation, and storage procedures are followed.
Maintain strict vegan and gluten-free production standards.
Ensure appropriate allergen controls and ingredient handling procedures are followed.
Make sure equipment is properly cleaned and maintained.

Ingredients & Inventory

Monitor ingredients, packaging, and bakery supplies.
Collaborate with Inventory Manager to keep relevant inventory and ingredient information current so production and purchasing needs can be accurately planned.
Communicate purchasing needs before ingredients run out.
Maintain proper ingredient rotation and storage.
Help receive and organize ingredient deliveries.
Minimize ingredient waste, overproduction, and product loss.

Qualifications

Professional bakery or food-production experience.
Previous experience supervising or leading other employees strongly preferred.
Experience with vegan and/or gluten-free baking preferred.
Strong understanding of baking techniques and ingredients.
Knowledge of food safety and sanitation practices.
Organized and able to manage multiple production priorities.
Comfortable using production, inventory, scheduling, or similar business software and maintaining accurate information within those systems.
Dependable, detail-oriented, and comfortable working in a fast-paced environment.
A true team player: willing and able to work hands-on alongside the bakery team while also collaborating with leadership to achieve company goals.

Compensation will be competitive and commensurate with skills & experience.

Pay: From $26.00 per hour
